The Wall Street Journal reported that almost 30% to 40% of the work being done at Salesforce is being done by artificial intelligence (AI) machines. As more companies start to embrace AI, we will see the ramifications of it more clearly. And there is no better example of a traditional business embracing AI than Kura Sushi.
1. Automated Conveyor Belt System
Kura Sushi’s innovative delivery system uses an automated conveyor belt, which transports plates of sushi around the restaurant. This system incorporates AI in several ways:
Demand Prediction: AI algorithms analyze historical sales data to predict which dishes will be in high demand during certain times and adjust the conveyor belt accordingly. For example, if certain sushi types are ordered more frequently on weekends, the system can anticipate this and ensure they are readily available.
Inventory Management: AI helps manage the back-end inventory by tracking which items are being served. When particular dishes run low, the system alerts kitchen staff to prepare more, ensuring that the supply meets customer demand without unnecessary overproduction.
2. Inventory Management
AI tools are employed for robust inventory management:
Optimizing Stock Levels: By analyzing sales patterns and storage capacities, AI can suggest optimal order quantities of ingredients. This minimizes waste and ensures that fresh ingredients are always available, thus enhancing the overall quality of the food.
Spoilage Prediction: Machine learning models can forecast when certain ingredients might perish, allowing staff to use or promote them before they go bad.
3. Enhancing Customer Experience
Kura Sushi focuses on personalizing the dining experience:
Personalized Recommendations: AI systems can analyze customer purchase history and preferences to provide tailored suggestions. For example, regular customers might receive alerts about new sushi rolls that align with their tastes.
Interactive Tablets: Many Kura Sushi locations use tablets at each table, enabling customers to order directly from the menu. AI can analyze the selections made through these tablets to offer personalized dining suggestions or reminders of favorites.
4. Quality Control
Maintaining the quality of food is paramount in the food industry:
Visual Inspection Systems: AI-driven computer vision technology can be used to monitor the plating of sushi. This ensures that dishes meet aesthetic standards before they are served. Cameras can assess color, portion size, and overall presentation.
Temperature Monitoring: AI can help monitor the storage conditions of food items, ensuring that the sushi is kept at the right temperature to maintain freshness and safety.
5. Order Management and Service Efficiency
AI streamlines the order management process:
Real-Time Processing: AI systems facilitate real-time processing of orders, reducing wait times for customers. As orders are placed through tablets, the kitchen staff receive them instantaneously, which improves the flow of service.
Automated Front-of-House Assistance: AI algorithms can assist servers in understanding which tables to attend to first, prioritize order deliveries, and manage customer inquiries effectively.
6. Dynamic Pricing and Promotions
AI technologies enable Kura Sushi to innovate its pricing strategies:
Surge Pricing Models: Similar to ride-sharing services, AI can help establish dynamic pricing based on demand trends, time of day, and special events in the area.
Targeted Promotions: AI can analyze customer data to create personalized promotions. For example, if a customer frequently orders a specific dish, Kura Sushi could send them a promotion for that item, encouraging repeat visits.
7. Feedback Analysis and Continuous Improvement
Kura Sushi uses AI to gather and analyze customer feedback:
Sentiment Analysis: AI can process online reviews and social media feedback to determine customer sentiment about specific dishes or overall dining experiences. This helps the management team identify areas needing improvement.
Data-Driven Decision Making: Insights gained from feedback analysis inform menu changes, special promotions, and service enhancements, ensuring that the restaurant adapts to customer needs over time.

8. Robotics and Automation
In specific locations, Kura Sushi has pioneered the use of robotics:
Robotic Servers or Sushi Making: Some outlets may utilize robotic systems for serving sushi to tables or assisting in sushi preparation. These robots can speed up service, reduce labor costs, and consistently execute tasks according to programmed standards.
Reduced Human Error: Automated systems help minimize human error in order preparation, particularly in high-volume settings.
Overall, Kura Sushi’s incorporation of AI across its operations allows it not only to enhance customer experience but also to improve operational efficiency, reduce costs, and maintain high-quality service standards. This aligns with the growing trend in the food service industry to leverage technology for competitive advantage.
Even if you don’t like sushi check out Kura for the experience. It is a trip!
